The Collection Bakery is a Pacific Northwest specialty food bakery located in Spokane, WA, owned and operated by Keely and Miguel Silva-Glenn. Their products include internationally diverse foods with a focus on using locally sourced, high-quality, sustainable ingredients whenever possible. The owners see food not only as a human necessity but as an expression of art and identity. They collaborate with local culinary artisans to curate a variety of foods and flavors to encourage the exploration of different food identities.
Their goal is to create a legacy of collaboration and growth not only in terms of new food experience, but as a community committed to accountability and social responsibility. They prioritize working with local farms and food providers, and their precedence is on supporting local, small, Immigrant, BIPOC, Women, and Queer-run businesses. They believe that healthy food comes from a healthy planet, and they partner with businesses that share that belief and are working actively to minimize their environmental impact.
Miguel and Keely Silva-Glenn met in New York City at a scratch bakery. They have worked throughout North America at high-end restaurants, bakeries, and cafes over the course of their career.
The Collection Bakery offers wholesale and catering services, with free home delivery on weekends in the Spokane area coming soon!
